Easy Vegetable Broth and Soup Recipe Vegan Gluten Free

Winter is not over quite yet but spring is right around the corner. If you ask me it’s the perfect time for a hot bowl of delicious soup! There are many ways to make broth and even more ways to make soup but I wanted to share my easy vegetable broth and soup recipe.

Easy and Simple Vegetable Broth and Soup Recipe

Ingredients for easy broth (makes 4 cups or 946 ml before adding water):

  • 1/2 Tablespoon of olive oil
  •  1 medium red onion, peeled (180 grams or 6.4 ounces)
  • 2 large stalks of celery (not including the leaves, 100 grams or 3.5 ounces)
  • 2 large carrots (150 grams or 5.3 ounces)
  • 2 medium tomatoes (400 grams or 14.1 ounces)
  • 2 cloves of garlic
  • 1/2 teaspoon of dried parsley
  • 1/4 teaspoon of dried thyme
  • 1/2 teaspoon of coriander
  • 2 teaspoons of sea salt
  • 1 Tablespoon of  freshly squeezed lemon juice

Instructions for easy broth:

  1. Add all ingredients to a high powered blender.
  2. Blend on highest speed using tamper to press ingredients towards the blades until completely smooth.
  3. Empty broth into a large pot and combine with 6 cups of water (1420 ml).
  4. Set aside.

Easy Vegetable Broth and Soup Recipe For a Cold Day. Vegan and Gluten Free!

Ingredients for vegetable soup (serves 5-6):

  • 2 garlic cloves, minced
  • 1 cup of carrots, chopped (100 grams or 3.5 ounces)
  • 2 large stalks of celery, chopped (1 cup, 100 grams or 3.5 ounces)
  • 1/4 cup of green onions, diced (25 grams or 0.88 oz)
  • 2-3 medium to large potatoes, peeled and chopped into cubes (4 cups, 600 grams or 21.2 ounces)
  • 2 cups of green beans (150 grams or 5.3 ounces, frozen)
  • 2 cups of peas (240 grams or 8.5 ounces, frozen)
  • 1 cup of corn (100 grams or 3.5 ounces, frozen)
  • 1 teaspoon of ground cumin
  • 2 teaspoons of sea salt
  • 1/8 teaspoon of ground black pepper
  • 1/4 teaspoon of paprika powder
  • 1/2 teaspoon of dried thyme
  • 1 teaspoon of dried parsley
  • 1/2 teaspoon of dried basil
  • 1/2 Tablespoon of dried oregano
  • 1/4 teaspoon of mustard powder

Instructions for vegetable soup:

  1. Place the pot with the broth you made on the stove over medium-high heat. Stir occasionally until broth begins to boil.
  2. Add all the soup ingredients into boiling broth. Stir occasionally for 30 minutes.
  3. Turn heat down to medium-low to allow soup to simmer. Keep stirring occasionally for 15 minutes or until vegetables are soft.
  4. Remove from heat and serve!
