We use almond cream a lot in our recipes! It is very easy to find here in Patra, Greece. We buy it from the Botanica Bio Market here in Patra. However, some people do not have access to almond cream and they want to make our recipes. If you do not know where to buy almond cream or cannot find it, look no further, here is how you make gluten free vegan almond cream!
- 1 1/2 cup of almond milk
- 1/2 cup of blanched almonds
- 1/4 teaspoon of sea salt
- 2 Tablespoons of agave syrup (do not add any agave syrup if almond milk is already sweetened)
- 1 teaspoon of xanthan or guar gum (but do not add this until other ingredients are blended smoothly!)
In a very high powered blender add all the ingredients except the xanthan gum. Blend until smooth. Now add the xanthan gum and continue blending until mixture thickens slightly. Pretty simple huh?
This is a great almond cream recipe and can be used in any of our recipes that have almond cream in them. This recipe yields 500 ml (2 1/2 cups) of almond cream. This kind of almond cream is typically used for baking and cooking as a dairy cream substitute.
