First of all, we would like to apologize for our lack of posts. A little over a week ago now, my hard drive fried. With it we lost our way of posting new recipes as well as several photos of things we had made but not posted yet. We are getting back on track though! Here we have a delicious raw vegan sugar free, dairy free strawberry banana ice cream! What better than a tasty frozen treat to keep you cool this summer? Guess what else? It is very easy to make!
Zucchini Burgers
It has been awhile since we posted because Athanasia has been swamped with her final exams. We are sorry about that. Exams are brutal for physics students! Athanasia had this amazing idea to make zucchini burgers using some veggies and spices. I helped her come up with some of the flavor enhancements but it was her genius idea to include spearmint in them, although I had my doubts at first… she was right all along! These burgers were amazing and according to her good friend Paulina they are also low in calories! Here is how we made them:
Cherry Pie Filling
I love cherry pies! In fact, I think I just love cherries but it takes a bit of patience to make a good cherry pie filling using a limited amount of raw cane sugar. Most cherry pies recipes I have seen over the years use so much sugar in them and I am not quite sure why. I can understand it helps shape it into more of a syrup but I just do not want to consume that much sugar. So, here is how you can make a delicious cherry pie filling using only 1 tablespoon of raw cane sugar:
Vegan Soy Steaks
Our good friend over at Viva Las Vegans introduced us to these vegan soy steaks. She also taught us how to make them as we had plenty of questions. They are very delicious and can be used in tacos, by themselves or even on a pizza! They come in many different sizes and for this recipe we will be using the smallest size. When you buy them they are basically dry and in a packaged. Here in Greece these can be found at both Botanica here in Patra and at Bamboo Vegan in Athens. I will explain to you how I make them.
Gluten Free Vegan Italian Pizza Crust
It should be no secret to our readers by now how much I love pizza. I had developed this recipe for a gluten free vegan Italian pizza crust right before our raw vegan challenge and it was one of the last things we ate before the challenge. We both loved it and so I wanted to make it again. A good Italian pizza crust has to have the right blend of herbs in it or else it will either lack flavor or be too overpowering.
Tomato Salsa
Who doesn’t love a good tomato salsa? I sure do! It is so easy to make at home too! It’s very simple and by making it at home you can leave out the vinegar which you never find in a fresh made salsa at a high quality restaurant. Why? Because vinegar doesn’t belong in salsa! Greek Salad with Vegan Feta Cheese
All last summer with Jake we were eating Greek salad, (we call it horiatiki salad here!). Now that it is summer again, well, at least the calendar says so but it hasn’t stopped raining the past two weeks (yay!), we are eating Greek salad every day. Thanks to our friends over at Viva Las Vegans, we now have a great vegan Feta cheese recipe! Which I know doesn’t mean a whole lot to Jake, but to a Greek, it is the most important thing to have a Greek salad with vegan Feta cheese!
365 Organic Yellow Corn Taco Shells Review
It is very difficult for us to find organic gluten free taco shells here in Greece, in fact, so far it has been impossible. The only taco shells we have been able to find here have been non-organic and may contain traces of gluten. When we have tried these shells, they have made us itch all over and do not agree with our digestive system so well. So, my mom sent me a pack of these 365 organic yellow corn taco shells.
