I would like to inform our subscribers that we are planning something for the meatout day on Friday, so you will receive our e-mails everyday as we post recipes this week leading up to it. So, we apologize for all the notifications you will be receiving from us this week but after that we will return to out usual rhythm! We are currently working with a nutritionist on a vegan nutrition project. This cashew cream fruit salad recipe was the idea of the nutritionist we are working with, Dimitra Makrigianni, as a fruit salad that will keep someone satisfied for dinner. The combination I chose made me fall in love with it and picture it for breakfast as well! A filling fruit salad featuring corn flakes as a crust, a fluffy sweet cashew cream filling paired with oranges, blonde raisins and cinnamon on top. One spoonful will convince you! Buckwheat Chocolate Chip Cookies
I don’t think I’ve ever met a cookie I didn’t like; not even tough cookies (you know you’re out there). I felt like enjoying some tasty cookies but I wanted to bend the rules a bit while making a new recipe at the same time. This is always risky business in the kitchen but this time the gamble paid off. I ended up making these amazing buckwheat chocolate chip cookies which are basically a gluten free version of oatmeal chocolate chip cookies. As we have said before, it is not easy for us to find rolled oats here but we found and have been using buckwheat flakes for a lot of things instead. I have really grown to love these little buckwheat flakes; they’re great! I also did something bold when it comes to cookies; I used coconut oil instead of vegan butter or margarine and it worked! What can I say? Sometimes that’s just how the cookie crumbles.
Gluten Free Muesli
I love eating gluten free muesli for breakfast even more than I love eating corn flakes for breakfast! Athanasia and I decided it was time to start preparing our own muesli mix to have ready as a quick breakfast. We worked together to create this mixture using dried fruits and some other ingredients. It turned out great and tastes amazing when combined with your favorite vegan milk. If you are looking for a fast, easy and simple breakfast to have ready to go, this is perfect!
Raw Caramel Thumbprints
I was making some cookies one day recently when Athanasia came up with this idea for raw caramel thumbprints. She wanted to keep the recipe somewhat simple yet delicious. I must admit she succeeded. I ate these like they were going out of style!
Easy Vegetable Broth and Soup
Winter is not over quite yet but spring is right around the corner. If you ask me it’s the perfect time for a hot bowl of delicious soup! There are many ways to make broth and even more ways to make soup but I wanted to share my easy vegetable broth and soup recipe.
Vegan Cheesecake
Valentine’s day is almost here, are you ready? We wanted to make a nice gourmet dessert for Valentine’s day this year and while we were thinking about what we should make, an opportunity fell right in our laps! We have been working with Violife to come up with some recipes using their products for a while now. Recently, they asked us to try making a dessert using their original vegan cream cheese. Naturally our first thought was to make a gluten free vegan cheesecake!
Our first thoughts were to do something extravagant, but ultimately we decided to get a basic vegan cheesecake recipe available so each person could garnish it the way they choose. We garnished ours using strawberry jam, strawberries and chocolate shavings. We made a delicious cacao based chocolate crust to pair with the amazing rich flavor of the vegan cheesecake filling. Without further ado, we present this year’s Valentine’s day treat:
Maple Cinnamon Buckmeal
I loved flavored instant oatmeal when I was growing up. It is difficult to find rolled oats and gluten free oats here but we did find these buckwheat flakes which make a great substitute. I wanted to make a quick and easy breakfast recipe for people who just do not have time to make a nice elaborate pancake breakfast in the morning. So, using these buckwheat flakes and two other ingredients (besides water) I came up with maple cinnamon buckmeal; oatmeal’s long lost cousin! It’s a simple recipe to make and only takes as long as it takes for water to heat up! If you can find gluten free oats they would work just as well for this recipe.
Hazelnut Hot Chocolate
What happens when hazelnuts decide to take cacao out on a hot date? Hazelnut hot chocolate of course! This recipe is raw vegan if you do not let it heat up too much in the blender. I’m happy Athanasia figured out how to make this because it’s delicious!
Vegan Nachos Bell Grande
It’s time for the Super Bowl! Do you have your vegan snacks planned out for Sunday yet? If you do not, why not join us in making vegan nachos bell grande a.k.a. nachos supreme! I keep recreating all these junk foods from my non-vegan days. Perhaps it is not the healthiest thing to be doing but I think it’s nice to show people who are thinking of making the transition what is actually possible. Besides, how unhealthy can walnuts, almonds and tomatoes actually be? It’s so delicious too! So, who’s ready for some football?
Vegan Sour Cream
We needed to make a good vegan sour cream recipe for the vegan Nachos Bell Grande recipe we have coming up later this week. Granted, it’s been a long time (8 years) since I have had sour cream, but I am really happy with how this recipe turned out! Of course, there are many possible uses for vegan sour cream so we felt this recipe deserved it’s own post. Here is how we made it: Continue reading Vegan Sour Cream
