As you can see from our old melomakarona recipe, they are traditionally made using flour, honey and sugar. However, we veganized it and left the honey out! This year I thought why not leave the flour out too? This new recipe uses walnuts combined with the traditional flavors of melomakarona: orange, cinnamon and cloves! One of the combinations I love most in desserts is peanut butter with chocolate. I understand there are people out there who despise these flavors together but I am certainly not one of them! I decided it was time to make a peanut butter and chocolate vegan cheesecake and I must say I really love how it turned out! Vegan Space Bars
Wait, so you’re telling me the space bar on my keyboard isn’t vegan? What is a vegan space bar anyway? If you have asked these questions then you’ve come to the right place. One of my favorite candy bars before I was vegan was Mars bars. These vegan space bars are not quite Mars bars but they are out of this world and delicious! They feature delicious caramel, a cookie nougat and bananas if you choose to use them covered in melted chocolate that hardens when it cools. These vegan candy bars are amazing and definitely worth trying!
Vegan Lemon Pie
One of my favorite treats during the summer is this vegan lemon pie! There are few things I associate more with summer than a chilled lemon dessert. This particular pie is unique as the base of the filling comes from chickpeas instead of cashews. This obviously makes the pie more affordable to make! Athanasia thought I was crazy to use chickpeas for a dessert at first but once she tried it she had no complaints! Here is how I made it:
A Week of Greek
Greek Food is only one of the reasons to visit Greece, although many will argue it is one of the best ones. Some other reasons are the beautiful scenery, swimming in the sea, the hot sun and of course the hospitality of the people. My country may be going through a rough patch but this doesn’t affect the way we welcome the travelers! If you are visiting Greece or plan to, please don’t hesitate to ask us anything, such as places to eat or how to go about being a vegan while staying here. In smaller villages people may not know what vegan is, but in islands and places that attract visitors more and more vegan options show up on the menus of the restaurants. You can ask for horiatiki salad without feta and Yemista without meat, you can find these two dishes everywhere in Greece this time of the year. Swimming in the crystal clear blue waters under the Mediterranean sun is enough to relax you and make you fall in love with this place! Vegan Chocolate Chip Pancakes
I love making pancakes for Athanasia before she wakes up. I actually tried to bring these to her as breakfast in bed but she refuses to eat in the bedroom (smart girl, we wouldn’t want ants)! Recently Boutique Vegan sent us some of these amazing dairy free chocolate chips. We first used some of them in out vegan turtles recipe. Today we used them to make these awesome vegan chocolate chip pancakes!
Instant Strawberry Pudding
It’s officially summer! During the summer, we like to use our oven less while coming up with easy snack ideas like this instant strawberry pudding. This recipe takes five minutes to make and is perfect for a hot summer afternoon snack. This pudding is even more enjoyable when it is served chilled.
Vegan Turtles
We were recently sent a package full of goodies to try from Boutique Vegan. One of the items they sent us were these delicious vegan dark chocolate chips. It’s difficult for us to find chocolate chips we trust to be vegan here, so this was awesome! Recently Athanasia found this recipe for vegan turtles so she had to try it (she loves cute little things like these little vegan turtles). We adapted the caramel recipe to one that worked a lot better for us. We decided we would use some of the chocolate chips from Boutique Vegan to make this recipe.
Vegan Chai Ice Cream
We recently received a package containing trial samples of some Rebel Mylk products in the mail. To our knowledge, these products are available in Europe and North America. Rebel Mylks are coconut based vegan milk products that do not contain any preservatives or artificial sweeteners. We really enjoyed some of the Mylks they sent us. My favorites were the chai and banana flavored coconut mylks. Athanasia’s favorites were the chocolate and banana flavored coconut mylks. I have really wanted to make a vegan chai ice cream for a while now so having this chai mylk from Rebel Kitchen presented us with the perfect opportunity at the right time of year!
