One of the very first recipes we posted was very similar to these Eggplant Boats we are posting today. It’s hard to believe it’s been two years already! One of the challenges for the food blog awards we are participating in is to make a simpler version of one of our favorite foods. We both loved the original version of this recipe so we wanted to see if we could simplify it without sacrificing flavor or satisfaction. We are very happy with the end result! I love making pancakes for Athanasia before she wakes up. I actually tried to bring these to her as breakfast in bed but she refuses to eat in the bedroom (smart girl, we wouldn’t want ants)! Recently Boutique Vegan sent us some of these amazing dairy free chocolate chips. We first used some of them in out vegan turtles recipe. Vegan Chai Ice Cream Recipe using Rebel Mylk

We recently received a package containing trial samples of some Rebel Mylk products in the mail. To our knowledge, these products are available in Europe and North America. Rebel Mylks are coconut based vegan milk products that do not contain any preservatives or artificial sweeteners.  We really enjoyed some of the Mylks they sent us. My favorites were the chai and banana flavored coconut mylks. Athanasia’s favorites were the chocolate and banana flavored coconut mylks. I have really wanted to make a vegan chai ice cream for a while now so having this chai mylk from Rebel Kitchen presented us with the perfect opportunity at the right time of year!

Vegan Tofu Parmesan Pasta Recipe Gluten Free pollo Parmigiana

Here is a recipe I have been excited to make and post for a while now. A few months back Violife/Viofree sent us a new product they will be releasing soon for us to try: vegan Parmesan cheese! I am not sure if this product is available in stores yet but it should be soon. So, we tried this new vegan Parmesan cheese and it is amazing! I was very eager to make a vegan tofu Parmesan pasta with it. This is a bit of a big recipe though. We had to carefully consider when the weather would allow for photos while still preparing everything else in time for the photo shoot. We finally pulled it off and it is one of the most delicious vegan main courses we have had in a long time! It’s not a very difficult recipe so much as it is time consuming. It’s worth it to make it though! Here is how it’s done:

Gluten Free Vegan Cheesecake Recipe Violife Viofree Vegan Original Creamy Eggless Dairy Free Gourmet Dessert

Valentine’s day is almost here, are you ready? We wanted to make a nice gourmet dessert for Valentine’s day this year and while we were thinking about what we should make, an opportunity fell right in our laps! We have been working with Violife to come up with some recipes using their products for a while now. Recently, they asked us to try making a dessert using their original vegan cream cheese. Naturally our first thought was to make a gluten free vegan cheesecake!

Our first thoughts were to do something extravagant, but ultimately we decided to get a basic vegan cheesecake recipe available so each person could garnish it the way they choose. We garnished ours using strawberry jam, strawberries and chocolate shavings. We made a delicious cacao based chocolate crust to pair with the amazing rich flavor of the vegan cheesecake filling. Slam Dunk Five Cheese Vegan Pizza

In our last post we mentioned how Viotros sent us a mountain of vegan cheese to come up with recipes for. Athanasia had the idea to mix and match different flavors of their vegan cheese for that post, so, now it’s my turn! I have casually mentioned three and five cheese pizzas to her from my non-vegan days only to hear her say “yeah right!”. Well, it was time to show her it’s true! With basketball season right around the corner it’s time for a slam dunk five cheese vegan pizza! We made this pizza using five different flavors of vegan cheese from Viotros and it is delicious!
