Winter is not over quite yet but spring is right around the corner. If you ask me it’s the perfect time for a hot bowl of delicious soup! There are many ways to make broth and even more ways to make soup but I wanted to share my easy vegetable broth and soup recipe.
Vegan Cheesecake
Valentine’s day is almost here, are you ready? We wanted to make a nice gourmet dessert for Valentine’s day this year and while we were thinking about what we should make, an opportunity fell right in our laps! We have been working with Violife to come up with some recipes using their products for a while now. Recently, they asked us to try making a dessert using their original vegan cream cheese. Naturally our first thought was to make a gluten free vegan cheesecake!
Our first thoughts were to do something extravagant, but ultimately we decided to get a basic vegan cheesecake recipe available so each person could garnish it the way they choose. We garnished ours using strawberry jam, strawberries and chocolate shavings. We made a delicious cacao based chocolate crust to pair with the amazing rich flavor of the vegan cheesecake filling. Without further ado, we present this year’s Valentine’s day treat:
Maple Cinnamon Buckmeal
I loved flavored instant oatmeal when I was growing up. It is difficult to find rolled oats and gluten free oats here but we did find these buckwheat flakes which make a great substitute. I wanted to make a quick and easy breakfast recipe for people who just do not have time to make a nice elaborate pancake breakfast in the morning. So, using these buckwheat flakes and two other ingredients (besides water) I came up with maple cinnamon buckmeal; oatmeal’s long lost cousin! It’s a simple recipe to make and only takes as long as it takes for water to heat up! If you can find gluten free oats they would work just as well for this recipe.
Hazelnut Hot Chocolate
What happens when hazelnuts decide to take cacao out on a hot date? Hazelnut hot chocolate of course! This recipe is raw vegan if you do not let it heat up too much in the blender. I’m happy Athanasia figured out how to make this because it’s delicious!
Vegan Nachos Bell Grande
It’s time for the Super Bowl! Do you have your vegan snacks planned out for Sunday yet? If you do not, why not join us in making vegan nachos bell grande a.k.a. nachos supreme! I keep recreating all these junk foods from my non-vegan days. Perhaps it is not the healthiest thing to be doing but I think it’s nice to show people who are thinking of making the transition what is actually possible. Besides, how unhealthy can walnuts, almonds and tomatoes actually be? It’s so delicious too! So, who’s ready for some football?
Vegan Sour Cream

Chocolate Chip Banana Cake
Today is Athanasia’s namesake day! Here in Greece they celebrate their namesake much like a birthday with a few differences. It’s traditional to name children after one of their grandparents which results in a continuation of the family names and many days of celebrations each year! Every day of the year is associated with at least one saint or martyr by the Orthodox church and they even have an “All Saint’s Day” in case your name is not one that is celebrated. Ok, now that we have covered some culture, let’s talk chocolate chip banana cake! A few months ago my mom suggested we turn our banana bread into one with chocolate chips. This, of course, was a great idea! We decided to make a cake instead of another bread so we could have a sweet for Athanasia’s namesake. This cake is delicious!
Barbecue Sauce
I love Barbecue sauce! I had tried to make my own BBQ sauce a few years ago but I didn’t really like it. Needless to say, I have learned a lot about making condiments since then so it was time to try again! Back home in Minnesota it is easy to find a delicious organic gluten free vegan BBQ sauce at just about any grocery store. Here there are only a few options and none of them are organic. Raw Month Challenge
Here it is, our raw month challenge results post! As some of our readers may remember, we decided to do a 30 day raw vegan challenge beginning at the end of April 2014 through May 2014. We never managed to post the results and our thoughts on the challenge before our hard drive crashed over the summer. Shame on us for not backing up, so if you are reading this right now you should make a mental note to back up your important files after you are done reading! Lucky for us, Athanasia kept old school notes with a pen and paper so we are still able to (finally) publish this post. Sure, we lost some of the recipes we had and, of course, any photos we did not already upload to our blog are gone too. However, we can still share with you what we do have.
