Imam Βayildi
The Greeks and Turks share many things, customs, words, and thankfully recipes. One of the most traditional Turkish dishes we also cook often in Greece is Imam Bayildi (which means “the Imam fainted”). He fainted because he heard how much olive oil his wife used in the Imam Bayildi! Quinori Salad
A reader of ours had a request for a new category, where we would gather all of our low calorie recipes for those trying to lose weight or follow a low cal diet. Sounds like a great idea, especially since we are eating all the food you see us making for this blog! At least Jake is exercising daily, but I can’t say I am. Now that swimming season is over there is no need to hide underneath the hoodies! So, trying recipes like this Quinori Salad is the best solution for me right now. Somehow Jake managed to make it very tasty, without a drop of olive oil (which to a Greek person sounds surreal)! I was easily convinced after tasting it and washing the dishes was so quick and easy without olive oil!
Quinori is a mix of legumes and seeds, including quinoa, sesame seeds, lentils and chickpeas. After being boiled, quinori can become a salad or soup. We found this mix at Botanica here in Patra, but I also saw it at Bamboo Vegan in Athens. However, if you can’t find it, you can use another legume mix or just plain quinoa.

It’s our first birthday at 2brokevegans.com! It’s been an amazing year filled with delicious food, new ideas and of course a lot of learning. We have been very blessed to have so many readers from all around the world (which is something we never imagined we would have when we launched our blog)! Slam Dunk Five Cheese Vegan Pizza
In our last post we mentioned how Viotros sent us a mountain of vegan cheese to come up with recipes for. Athanasia had the idea to mix and match different flavors of their vegan cheese for that post, so, now it’s my turn! I have casually mentioned three and five cheese pizzas to her from my non-vegan days only to hear her say “yeah right!”. Well, it was time to show her it’s true! With basketball season right around the corner it’s time for a slam dunk five cheese vegan pizza! We made this pizza using five different flavors of vegan cheese from Viotros and it is delicious!

Juicing Like A Sir
Juicing like a sir! My family and I completed a 60 day juice fast back in early 2012 after watching the documentary ‘Fat, Sick & Nearly Dead’ based upon recommendations from my sister. We decided to give it a try and had fantastic results! I remember feeling so energized and cleansed from fasting. Of course, eating whole food again after the fast was such an amazing feeling too! A lot of people can get confused about whether or not juicing is right for them. Health is a tricky subject so we are not going to recommend to anybody who has not talked to their nutritionist or medical professional to try juicing. It is difficult to know exactly what nutrients you need to acquire on an everyday basis through juicing. Also, we are not going on a juice fast right at this moment either, however, we do enjoy the occasional green juice as a meal replacement.
