Green Beans with our grandma's secret

Everyone who cooks has a dream, for their creations to be eaten with enjoyment, enthusiasm, and cheers! Or is it just me? I am sure you want your food to taste amazing, using as much simplicity as possible. Green beans with my Grandma’s secret have amazing flavor using only red onions and parsley. This one is for Julie, enjoy!

Ingredients:

  • 3 carrots
  • 2 large potatoes, chopped in medium-small pieces
  • 500 grams (about 2 1/4 cups) of green beans
  • 1/4 of a red onion
  • 15 leafs of fresh parsley
  • 2 tomatoes
  • 1/2 teaspoon of raw organic cane sugar
  • sea salt

Peel the carrots and the potatoes; chop them. Chop the red onion and the parsley as well. Grate the tomatoes, to get their juice; or if you find it easier, blend them in the blender. Add the sea salt and sugar in the tomato sauce.

Coat a big sauce pan/pot (you know I mean… the big deep pot!!!!) with some olive oil and place the pot over medium heat. When the olive oil is hot enough, add the chopped onion and the parsley; sizzle them together! This is the secret, and it gives the beans such an amazing flavor!

Sizzle them for a couple of minutes and then add the carrots; sizzle them for 2-3 minutes for them to somewhat soften up. After that, add the potatoes and sizzle them as well to soften them for 3-4 minutes. Now add the beans and sizzle them too for 1-2 minutes, carefully stirring so that you don’t mash anything! In the end add the tomato juice, stir and add enough water to barely cover the food. Cover the pot with the lid, but not completely, so the water can evaporate and leave a thicker sauce behind. Lower the temperature so  the food can cook slowly. Cook until the vegetables are soft, which can take from 30-50 minutes depending on the vegetables and the stove.

  1. This looks good and thanks for giving me another green bean recipe.I really liked the Greek green beans so I hope that parsley and red onion does something really magical because I think that one is going to be hard to top.I’m going to give this a try though and let you guys know.

      1. I’m starting to think otherwise as I’ve had the Greek green beans two or three times in the past week and half and then I topped it all with a green bean casserole also.I ‘m still looking forward to this though in a few days.I appreciate you guys thinking of me.
