Well, here we are winding down with 3 days left of our 30 day challenge. I feel like sharing another recipe I have made twice during the challenge: raw red pepper hummus. I originally made this recipe in Athens a few weeks ago but we loved it so much I made it again last week. We enjoyed it with raw carrot and raw zucchini sticks in Athens and with our raw flax seed crackers here in Patra. It is simple and easy to make provided you have a high powered blender like a Vitamix or Thermo-mix. Raw Vegan Pizza
As I have mentioned before in an earlier raw challenge post, I miss pizza! Pizza is my favorite food so it was time to make a raw vegan pizza. I couldn’t be happier with the result and I must say even one piece of this raw vegan pizza is very filling!
Cinnamon Vanilla Banana Smoothie
It’s time for another smoothie as we have 8 days remaining on the raw vegan challenge! We have made some exciting foods that are delicious during this challenge. Maybe too delicious… We certainly use more nuts than we probably should be using if we really wanted to embrace the challenge. As a result I have only lost 7 kilograms (15.5 pounds) so far. Raw Vegan Chocolate Caramel Pie
We had not made or had any kind of a dessert since we started our 30 day raw vegan challenge. We both thought it was a good time to try to make one which is how this raw vegan chocolate caramel pie was born! It was important to us to not use any sugar and we were successful thanks to dates and a little bit of agave syrup in the chocolate cream. There are three elements to this pie: the crust, caramel cream and chocolate cream. Let’s get started:
Raw Vegan Alfredo Pasta
One of our favorite recipes we have made so far is our Vegan Chicken Alfredo Pasta. Since we are still doing our 30 day raw challenge I wanted to make a raw vegan Alfredo pasta. We used raw carrots and raw zucchinis to make the noodles and a delicious Alfredo sauce to drown them in. If you are not following a strict raw diet you can enjoy this dish with a side of marinated tofu (click here for recipe) and some mini-rusks for a more filling meal.
Raw Trail Mix
We both love a good raw trail mix, especially as a snack to go! One of our favorite snacks to take with us to the beach last summer was trail mix and I am sure that will continue this summer as well. We decided to start mixing our own trail mixes and have come to love this particular mixture the best. It is very easy and simple to make.
Strawberry Banana Fruit Salad
One day, right before we began our 30 day raw vegan challenge, Athanasia made this amazing strawberry banana fruit salad. It instantly became my favorite fruit salad! It is very delicious and easy to make so we made it again last week to enjoy during our challenge. Today marks day 14 of our challenge. Two weeks behind us, two weeks to go. I am feeling very good and am enjoying this challenge quite a bit. I may even be interested in maintaining a 75% to 80% raw vegan diet after we are done at this point. I am looking forward to pizza again too, but I do not crave it anymore at this point. Anyway, here is how we made the fruit salad:
Warrior Smoothie
It is day 12 of our challenge. We are in Athens for Athanasia’s cousin’s wedding this weekend, the weather has been beautiful and we are having a wonderful time! Raw Vegan Tortilla Soup
Today is day 10 already of our 30 day raw vegan challenge. It really does feel amazing still, I have gone raw before and know eventually the initial feeling fades a bit. However, I do remember always having enough energy to get everything on my plate finished each day. I have been using my current energy boost to work on our site quite a bit as well as write new music! It has been an amazing 10 days so far as I look forward to the next 20 days. On day 3 we enjoyed this raw vegan tortilla soup. I grew up eating tomato soups and tortilla soup is one of my favorite tomato soup twists! Athanasia is still new to the tomato soup world so this was a bigger hit with me than it was with her, but she still liked it. It is another quick and easy soup to make and this is how I did it:
Raw Vegan Zucchini Lasagna
As mentioned in the raw vegan cashew ricotta cheese post, we were in the mood for raw vegan zucchini lasagna and this recipe definitely satisfied us! We made this recipe for the 5th day of our challenge; it proved to be filling and delicious! We even had leftover raw lasagna sauce as well as cashew ricotta cheese to make a pasta out of grated carrots and zucchinis the next day! So far, I would have to say this recipe has been my favorite one since we started our 30 day raw vegan challenge! Most raw recipes are quick and easy, but this one takes some time. It is worth it though as you will find out with every gourmet bite! Let’s get started!
The first thing you will need to prepare is some raw vegan Italian sausage meat made from walnuts. We made a variation of our already existing recipe (click here to view) without using vegan Worcester sauce because we questioned whether or not it was raw. You will start by soaking 3 cups of walnuts in water for 12 to 24 hours, so you will need to plan ahead for this recipe!
