Roasted Red Peppers with Vegan Feta Cheese Recipe

Due to popular demand we present to you a simple recipe for a Greek appetizer: roasted red peppers with vegan feta cheese. Jake is in love with the vegan feta, I have heard him say things like “I would buy it dinner and…”, “I could eat this every day” (which has been the case the past few weeks), and “I should marry this feta and have little feta kids running around”. Sounds like he found himself a mate there! It also sounds like he has more Greek in him than it shows. Who knew? Lucky for him, feta goes with everything, and especially with roasted red peppers! (Note from Jake: It’s true, I have said all of these things. I am not saying I am proud of it but I am certainly not ashamed either. This vegan feta is scrumtrulescent!)

Gluten Free Vegan Pecan Pie Recipe Thanksgiving Christmas Holiday Festivus Eggless Dairy Free Low Sugar

I loved pecan pie before I became vegan. Every holiday meal at Grandpa & Grandma’s featured a choice of pecan pie or pumpkin pie for dessert. I will always remember walking into their warm house from the bitter cold November Minnesota weather every Thanksgiving. We were always greeted at the door by the warm smiles of my Grandparents and the unforgettable aroma of my Grandma’s amazing cooking. I am still trying to figure out how any of us ever had any room left in our bellies for dessert! Yet, there always seemed to be just enough room left for a slice of pie. I love pumpkin pie as much as anybody possibly could but I always chose pecan pie because I liked it just a little bit more. I told Athanasia I wanted to veganize my favorite pie of all time so we made this delicious gluten free vegan pecan pie. This is how I celebrate my American roots for Thanksgiving here in Greece!

Of course, it is not uncommon to use flour as a thickener when making condiments, however, this meant it was time for me to make our own gluten free ketchup! I often thought store bought ketchup was a bit too sweet for my liking anyway so this was an opportunity I was looking forward to.

The Greeks and Turks share many things, customs, words, and thankfully recipes. One of the most traditional Turkish dishes we also cook often in Greece is Imam Bayildi (which means “the Imam fainted”).  He fainted because he heard how much olive oil his wife used in the Imam Bayildi!
