Here is a recipe I have been excited to make and post for a while now. A few months back Violife/Viofree sent us a new product they will be releasing soon for us to try: vegan Parmesan cheese! I am not sure if this product is available in stores yet but it should be soon. So, we tried this new vegan Parmesan cheese and it is amazing! I was very eager to make a vegan tofu Parmesan pasta with it. This is a bit of a big recipe though. We had to carefully consider when the weather would allow for photos while still preparing everything else in time for the photo shoot. We finally pulled it off and it is one of the most delicious vegan main courses we have had in a long time! It’s not a very difficult recipe so much as it is time consuming. It’s worth it to make it though! Here is how it’s done:
Valentine’s day is almost here, are you ready? We wanted to make a nice gourmet dessert for Valentine’s day this year and while we were thinking about what we should make, an opportunity fell right in our laps! We have been working with Violife to come up with some recipes using their products for a while now. Recently, they asked us to try making a dessert using their original vegan cream cheese. Naturally our first thought was to make a gluten free vegan cheesecake!
Our first thoughts were to do something extravagant, but ultimately we decided to get a basic vegan cheesecake recipe available so each person could garnish it the way they choose. We garnished ours using strawberry jam, strawberries and chocolate shavings. We made a delicious cacao based chocolate crust to pair with the amazing rich flavor of the vegan cheesecake filling. Who does not love a simple, quick and easy snack recipe? What could be quicker than opening a bag of chips and taking 5 minutes to make a dip? Thanks to the vegan original cream cheese by Violife we present this vegan sour cream and cheddar dip! Before I was a vegan, I loved sour cream and cheddar chips. I am extremely pleased how well this recipe turned out. Here is how we did it:
Pows! What in the world is a pow? Well, as legend has it, my mom’s sister and her roommate made these when they were in college. They took the only ingredients they had left in the house and pow! Pows were officially born. My mom made these for my siblings and I as we grew up and we loved them! I actually never knew the story behind them until I told my mom a few weeks ago I was making vegan pows. She told me the story so now I know they came from my Aunt.
Making this recipe vegan was pretty easy and definitely delicious! I had to make these because I wanted Athanasia to try one of my favorite childhood foods veganized. As it turns out, she loves them too so I have made these a few times in the past month! This tasty grub can be served as an appetizer, snack, side dish or even a main course (they are filling)!

However, we can teach you how to make your own gluten free vegan mozzarella sticks right in your own kitchen! Fair enough, right? These are so delicious and oozing with melted vegan cheese (thanks to the amazing vegan mozzarella cheese blocks made by Violife/Viofree)! As many of our readers have already figured out, we are vegan junk food junkies. We love making pizzas, vegan chicken nuggets and onion rings, so, it was definitely time to add vegan mozzarella sticks to our menu!
It’s our first birthday at 2brokevegans.com! It’s been an amazing year filled with delicious food, new ideas and of course a lot of learning. We have been very blessed to have so many readers from all around the world (which is something we never imagined we would have when we launched our blog)! In our last post we mentioned how Viotros sent us a mountain of vegan cheese to come up with recipes for. Athanasia had the idea to mix and match different flavors of their vegan cheese for that post, so, now it’s my turn! I have casually mentioned three and five cheese pizzas to her from my non-vegan days only to hear her say “yeah right!”. Well, it was time to show her it’s true! With basketball season right around the corner it’s time for a slam dunk five cheese vegan pizza! We made this pizza using five different flavors of vegan cheese from Viotros and it is delicious!
