One of my favorite treats during the summer is this vegan lemon pie! There are few things I associate more with summer than a chilled lemon dessert. This particular pie is unique as the base of the filling comes from chickpeas instead of cashews. This obviously makes the pie more affordable to make! Athanasia thought I was crazy to use chickpeas for a dessert at first but once she tried it she had no complaints! Here is how I made it:

Vegan Caramel Apple Cheesecake
Who doesn’t love a good vegan cheesecake? I have made some raw vegan cheesecakes before but without a dehydrator it is much easier and more cost effective for us to make an almost raw cheesecake. We have included instructions below on how to make it completely raw if you do have a dehydrator or feel like running your convection oven at it’s lowest temperature for 12 hours or more. Athanasia and I were discussing what our last post of the year should be and we decided to make this vegan caramel apple cheesecake. We had not posted any cheesecakes before today so it’s about time we did!
Gluten Free Vegan Pecan Pie
I loved pecan pie before I became vegan. Every holiday meal at Grandpa & Grandma’s featured a choice of pecan pie or pumpkin pie for dessert. I will always remember walking into their warm house from the bitter cold November Minnesota weather every Thanksgiving. We were always greeted at the door by the warm smiles of my Grandparents and the unforgettable aroma of my Grandma’s amazing cooking. I am still trying to figure out how any of us ever had any room left in our bellies for dessert! Yet, there always seemed to be just enough room left for a slice of pie. I love pumpkin pie as much as anybody possibly could but I always chose pecan pie because I liked it just a little bit more. I told Athanasia I wanted to veganize my favorite pie of all time so we made this delicious gluten free vegan pecan pie. This is how I celebrate my American roots for Thanksgiving here in Greece!
Last year we went on a bit of a sugar frenzy with our recipes so I wanted to do my best to make this recipe delicious without using as much. What? A low sugar gluten free vegan pecan pie? That’s right! The only actual sugar in this entire recipe is a tablespoon in the crust. Also, since it’s a vegan recipe it obviously has no eggs in it either! Here is how I did it: Continue reading Gluten Free Vegan Pecan Pie
Raw Vegan Chocolate Caramel Pie
We had not made or had any kind of a dessert since we started our 30 day raw vegan challenge. We both thought it was a good time to try to make one which is how this raw vegan chocolate caramel pie was born! It was important to us to not use any sugar and we were successful thanks to dates and a little bit of agave syrup in the chocolate cream. There are three elements to this pie: the crust, caramel cream and chocolate cream. Let’s get started:
Just Like Heaven Cream Pie
Impress your guests with the most delicious pie we have ever made! We present the just like heaven cream pie:
We offered this pie to non-vegan friends and they are still thinking about it! I suppose that means it was pretty good. It’s a moral victory when people love what we make, especially if we are trying to show them we do not only eat salads! Continue reading Just Like Heaven Cream Pie

Autumn in New York Cream Pie
Today it is Athanasia’s father’s birthday! So, Happy Birthday George! What better way is there to share the joy of a birthday than making a birthday treat? When Athanasia (my better half) and I were discussing the options for a sweet treat, I came up with this idea. I will admit, Athanasia was a little bit hesitant (because of her dislike for cinnamon) so she said to me: “sell me on it”. Well, I am proud to say after she tried it she is not only sold on it, but is a believer! The flavor reminds me of autumn in New York; warm colors, crisp air and bursting with flavor! Try it for yourself, it’s the perfect autumn treat! Continue reading Autumn in New York Cream Pie
Green Tart with Vegan Blue Cheese
The most effective inspiration is the deadline they say. We had some broccoli that was starting to look not as fabulously green. It was making me nervous, yet inspired! This is how our green tart with vegan blue cheese was born. Continue reading Green Tart with Vegan Blue Cheese
