This gluten free vegan orange chicken is bursting with flavor! There are a few steps and it requires some patience to make it; however, it’s worth it! Do not be afraid to venture into the unknown! I have been trying new ideas and going where I never imagined I would dare when it comes to cooking and it has been so rewarding! When I first began I was merely dipping my toe in the water and now I am swimming against the current! It feels so good to work so hard at something and pull it off. Let’s get to it, here is how I accomplished vegan orange chicken:

Gluten Free Vegan Buttermilk Pancakes
I woke up this morning with a little bit of hunger. As I sat contemplating what I wanted to make I realized it had been a long time since I had tasted a good buttermilk pancake. The only question I had was if I could make gluten free vegan buttermilk pancakes. If you are only on a gluten free diet, you’re all set. However, if you are on a vegan diet as well, it takes an extra step or two. Here is how I did it: Continue reading Gluten Free Vegan Buttermilk Pancakes

Moussaka
Moussaka is a traditional Greek recipe for those who love great food! Baked potatoes and satisfying eggplant slices with a rich tomato and Vegan Italian Sausage Meat sauce. All of this is covered with a thick and creamy bechamel sauce. It is so good!!
Μπριαμ! Vegetables in the Oven
I suppose my ancestors couldn’t come up with any other word for this recipe than μπριάμ (bree-Ahhm), which doesn’t mean anything in particular from what I know! For this recipe you take vegetables and cook them in a pan in the oven, all together, until they are soft and yummy! Hence the name we gave it: vegetables in the oven.
You can use eggplants, potatoes, zucchinis and

A perfect, soft eggplant bread! What else are we gonna think of?! 🙂 Continue reading Eggplant Bread
Roasted Red Pepper Hummus
I love roasted red pepper hummus and have not had it since I moved to Greece. I’ve always known it was easy to make but I was so used to being able to buy it almost anywhere in Minnesota. My sister and her boyfriend sent us a huge vegan cookbook as a Christmas gift (thanks Krysti and Jacob!) and as of right now it is the only cookbook we own. It has almost 300 pages packed with recipes so it may be the only cookbook we will ever need to own! The name of the cookbook is Veganomicon by Isa Chandra Moskowitz & Terry Hope Romero (click here for link) and it is amazing. We have made some modifications to this recipe after we made it a few times. We prefer our hummus to be runnier than the book’s recipe turned out. Continue reading Roasted Red Pepper Hummus
Lasagna Pizza
Recently, I was sitting at the computer contemplating what kind of food I wanted to make in the future. Nothing was really coming to mind and for some reason I kept thinking about the two layer eggplant lasagna I had made a few months back. I started wondering if I should attempt another lasagna. How could I make improvements to a dish that is already one of my favorites though? Then it hit me: lasagna pizza! Why had I never thought of this before? It was time to get to work… Continue reading Lasagna Pizza
Vegan Italian Sausage Meat
Vegan Italian sausage meat made from walnuts? That’s right, we went there and it is delicious! Thanks to the fennel seeds this recipe has an authentic sausage flavor. In fact, tasting this sausage from walnuts reminds me of the best sausage I ever had before becoming a vegan: Rocky Rococo’s pizza back home in Brooklyn Park, Minnesota! This is how it’s done: Continue reading Vegan Italian Sausage Meat
Steamed Vegetable Salad
Another healthy idea for New Year’s Resolutions! We are not really fond of dressings, so I try to find new ways to enrich a salad with flavor. I thought of steaming up some vegetables and adding them in this green salad. Drizzle some olive oil on it, some freshly squeezed lemon juice and sea salt sprinkled over the top. We loved the outcome! Especially when the steamed vegetables are still warm, they act like little juicy surprises bursting with flavor! Here is how to make the steamed vegetable salad (you can use whatever vegetables you like): Continue reading Steamed Vegetable Salad
