This smoothie is so delicious it makes me want to sing acapella (Get it? Peach perfect? From Pitch Perfect? I am a sucker for those kind of movies but can you blame me?!) Ok, but seriously, this peach perfect smoothie is one of my favorite smoothies; plus it’s really easy and simple to make. This smoothie is great for breakfast, in-between meals snack or even a well deserved treat! I am no nutritionist but it’s got some good stuff in it too.

Vegan Chocolate Chip Pancakes
I love making pancakes for Athanasia before she wakes up. I actually tried to bring these to her as breakfast in bed but she refuses to eat in the bedroom (smart girl, we wouldn’t want ants)! Recently Boutique Vegan sent us some of these amazing dairy free chocolate chips. We first used some of them in out vegan turtles recipe. Today we used them to make these awesome vegan chocolate chip pancakes!

Today we are going to take a break from our nutrition series (for those of you following us) to talk about Meatout – eat vegan for a day. Meatout is a day to encourage all people to try a vegan diet for a day. We think it would be great if more people tried a vegan diet. Cashew Cream Fruit Salad
I would like to inform our subscribers that we are planning something for the meatout day on Friday, so you will receive our e-mails everyday as we post recipes this week leading up to it. So, we apologize for all the notifications you will be receiving from us this week but after that we will return to out usual rhythm! We are currently working with a nutritionist on a vegan nutrition project. This cashew cream fruit salad recipe was the idea of the nutritionist we are working with, Dimitra Makrigianni, as a fruit salad that will keep someone satisfied for dinner. The combination I chose made me fall in love with it and picture it for breakfast as well! A filling fruit salad featuring corn flakes as a crust, a fluffy sweet cashew cream filling paired with oranges, blonde raisins and cinnamon on top. One spoonful will convince you! Gluten Free Muesli
I love eating gluten free muesli for breakfast even more than I love eating corn flakes for breakfast! Athanasia and I decided it was time to start preparing our own muesli mix to have ready as a quick breakfast. We worked together to create this mixture using dried fruits and some other ingredients. It turned out great and tastes amazing when combined with your favorite vegan milk. If you are looking for a fast, easy and simple breakfast to have ready to go, this is perfect!
Maple Cinnamon Buckmeal
I loved flavored instant oatmeal when I was growing up. It is difficult to find rolled oats and gluten free oats here but we did find these buckwheat flakes which make a great substitute. I wanted to make a quick and easy breakfast recipe for people who just do not have time to make a nice elaborate pancake breakfast in the morning. So, using these buckwheat flakes and two other ingredients (besides water) I came up with maple cinnamon buckmeal; oatmeal’s long lost cousin! It’s a simple recipe to make and only takes as long as it takes for water to heat up! If you can find gluten free oats they would work just as well for this recipe.
Hazelnut Hot Chocolate
What happens when hazelnuts decide to take cacao out on a hot date? Hazelnut hot chocolate of course! This recipe is raw vegan if you do not let it heat up too much in the blender. I’m happy Athanasia figured out how to make this because it’s delicious!
Chocolate Chip Banana Cake
Today is Athanasia’s namesake day! Here in Greece they celebrate their namesake much like a birthday with a few differences. It’s traditional to name children after one of their grandparents which results in a continuation of the family names and many days of celebrations each year! Every day of the year is associated with at least one saint or martyr by the Orthodox church and they even have an “All Saint’s Day” in case your name is not one that is celebrated. Ok, now that we have covered some culture, let’s talk chocolate chip banana cake! A few months ago my mom suggested we turn our banana bread into one with chocolate chips. This, of course, was a great idea! We decided to make a cake instead of another bread so we could have a sweet for Athanasia’s namesake. This cake is delicious!
