It should be no secret to our readers by now how much I love pizza. I had developed this recipe for a gluten free vegan Italian pizza crust right before our raw vegan challenge and it was one of the last things we ate before the challenge. We both loved it and so I wanted to make it again. A good Italian pizza crust has to have the right blend of herbs in it or else it will either lack flavor or be too overpowering.

Tomato Salsa
Who doesn’t love a good tomato salsa? I sure do! It is so easy to make at home too! It’s very simple and by making it at home you can leave out the vinegar which you never find in a fresh made salsa at a high quality restaurant. Why? Because vinegar doesn’t belong in salsa! It is put into canned salsas as a preservative. Here is how you can make a mild to spicy raw tomato salsa: Continue reading Tomato Salsa
Gluten Free Vegan Soft Pretzels with Cheese
It has been a long time since I have had a soft pretzel with cheese. After our 30 day raw vegan challenge was over this was the first thing I wanted to attempt to make. Working without gluten can be difficult when trying to form shapes with dough but I think these gluten free vegan soft pretzels with cheese turned out great for my first attempt! Here is how I did it: Continue reading Gluten Free Vegan Soft Pretzels with Cheese
365 Organic Yellow Corn Taco Shells Review
It is very difficult for us to find organic gluten free taco shells here in Greece, in fact, so far it has been impossible. The only taco shells we have been able to find here have been non-organic and may contain traces of gluten. When we have tried these shells, they have made us itch all over and do not agree with our digestive system so well. So, my mom sent me a pack of these 365 organic yellow corn taco shells. There are 12 shells in a pack and surprisingly only 3 of them were damaged on their journey across the Atlantic Ocean! Continue reading 365 Organic Yellow Corn Taco Shells Review
Brainiac Smoothie
Here in Greece it is time for exams and Athanasia needed a good brain boosting food. Hemp seeds are very nutritious indeed, but most people do not understand they are truly a superfood! Did you know they contain an almost perfect balance of essential fatty acids which help the brain with memory and concentration? Just ask Marjorie Nolan Cohn of the Academy of Nutrition and Dietetics! So, for our last post during our 30 day raw challenge I present to you the brainiac smoothie! This smoothie also features 7 grams of protein from the hemp seeds alone, here is how you can make one: Continue reading Brainiac Smoothie
Raw Red Pepper Hummus
Well, here we are winding down with 3 days left of our 30 day challenge. I feel like sharing another recipe I have made twice during the challenge: raw red pepper hummus. I originally made this recipe in Athens a few weeks ago but we loved it so much I made it again last week. We enjoyed it with raw carrot and raw zucchini sticks in Athens and with our raw flax seed crackers here in Patra. It is simple and easy to make provided you have a high powered blender like a Vitamix or Thermo-mix. If you do not you can soak the cashews in water overnight and try using a food processor for a slightly chunkier hummus. Continue reading Raw Red Pepper Hummus
Raw Vegan Pizza
As I have mentioned before in an earlier raw challenge post, I miss pizza! Pizza is my favorite food so it was time to make a raw vegan pizza. I couldn’t be happier with the result and I must say even one piece of this raw vegan pizza is very filling!
Cinnamon Vanilla Banana Smoothie
It’s time for another smoothie as we have 8 days remaining on the raw vegan challenge! We have made some exciting foods that are delicious during this challenge. Maybe too delicious… We certainly use more nuts than we probably should be using if we really wanted to embrace the challenge. As a result I have only lost 7 kilograms (15.5 pounds) so far. I suppose I could go running more often too though. So, let’s get back to a smoothie with this amazing cinnamon vanilla banana smoothie! Continue reading Cinnamon Vanilla Banana Smoothie
Raw Vegan Chocolate Caramel Pie
We had not made or had any kind of a dessert since we started our 30 day raw vegan challenge. We both thought it was a good time to try to make one which is how this raw vegan chocolate caramel pie was born! It was important to us to not use any sugar and we were successful thanks to dates and a little bit of agave syrup in the chocolate cream. There are three elements to this pie: the crust, caramel cream and chocolate cream. Let’s get started:
Raw Vegan Alfredo Pasta
One of our favorite recipes we have made so far is our Vegan Chicken Alfredo Pasta. Since we are still doing our 30 day raw challenge I wanted to make a raw vegan Alfredo pasta. We used raw carrots and raw zucchinis to make the noodles and a delicious Alfredo sauce to drown them in. If you are not following a strict raw diet you can enjoy this dish with a side of marinated tofu (click here for recipe) and some mini-rusks for a more filling meal.
