Vegan Caramel Apple Cheesecake
Who doesn’t love a good vegan cheesecake? I have made some raw vegan cheesecakes before but without a dehydrator it is much easier and more cost effective for us to make an almost raw cheesecake. We have included instructions below on how to make it completely raw if you do have a dehydrator or feel like running your convection oven at it’s lowest temperature for 12 hours or more. Athanasia and I were discussing what our last post of the year should be and we decided to make this vegan caramel apple cheesecake. We had not posted any cheesecakes before today so it’s about time we did!

No Christmas is complete without a meatloaf, right? We have made a delicious gluten free vegan meatloaf we want to share with our readers this holiday season! This delicious vegan loaf primarily consists of walnuts and portobello mushrooms. While it was in the oven, I could not believe how amazing it’s aroma was! I knew it was going to be tasty and it sure did not let us down in that department! This was one of those recipes I was not entirely sure would work on my first attempt, however, it turned out great. Pows! Gluten Free Vegan “Meat” on Bread with Cheddar
Pows! What in the world is a pow? Well, as legend has it, my mom’s sister and her roommate made these when they were in college. They took the only ingredients they had left in the house and pow! Pows were officially born. My mom made these for my siblings and I as we grew up and we loved them! I actually never knew the story behind them until I told my mom a few weeks ago I was making vegan pows. She told me the story so now I know they came from my Aunt.
Making this recipe vegan was pretty easy and definitely delicious! I had to make these because I wanted Athanasia to try one of my favorite childhood foods veganized. As it turns out, she loves them too so I have made these a few times in the past month! This tasty grub can be served as an appetizer, snack, side dish or even a main course (they are filling)!

Roasted Red Peppers With Vegan Feta
Due to popular demand we present to you a simple recipe for a Greek appetizer: roasted red peppers with vegan feta cheese. Jake is in love with the vegan feta, I have heard him say things like “I would buy it dinner and…”, “I could eat this every day” (which has been the case the past few weeks), and “I should marry this feta and have little feta kids running around”. Sounds like he found himself a mate there! It also sounds like he has more Greek in him than it shows. Who knew? Lucky for him, feta goes with everything, and especially with roasted red peppers! (Note from Jake: It’s true, I have said all of these things. I am not saying I am proud of it but I am certainly not ashamed either. This vegan feta is scrumtrulescent!)
Gluten Free Vegan Pecan Pie
I loved pecan pie before I became vegan. Every holiday meal at Grandpa & Grandma’s featured a choice of pecan pie or pumpkin pie for dessert. I will always remember walking into their warm house from the bitter cold November Minnesota weather every Thanksgiving. We were always greeted at the door by the warm smiles of my Grandparents and the unforgettable aroma of my Grandma’s amazing cooking. I am still trying to figure out how any of us ever had any room left in our bellies for dessert! Yet, there always seemed to be just enough room left for a slice of pie. I love pumpkin pie as much as anybody possibly could but I always chose pecan pie because I liked it just a little bit more. I told Athanasia I wanted to veganize my favorite pie of all time so we made this delicious gluten free vegan pecan pie. This is how I celebrate my American roots for Thanksgiving here in Greece!
Last year we went on a bit of a sugar frenzy with our recipes so I wanted to do my best to make this recipe delicious without using as much. What? A low sugar gluten free vegan pecan pie? That’s right! The only actual sugar in this entire recipe is a tablespoon in the crust. Also, since it’s a vegan recipe it obviously has no eggs in it either!
