Chipotle Hummus

I love hummus! I made this chipotle hummus about a month ago now while Athanasia was in Athens because she is not a big fan of mildly spicy foods. This is a pretty common occurrence for me to make spicy foods to eat while she is away. I would label this particular hummus to be in the mild category of spicy. Hummus makes a great snack for around the house or even to take with you to work or school. One of the best parts about making hummus is how extremely quick and easy it is to make it! I like to boil my own chickpeas but it’s even quicker if you prefer to use canned chickpeas.

Chipotle BBQ Vegan Cheese Dip Recipe

This chipotle BBQ vegan cheese dip is one of my favorite snacks I’ve ever made! We use our own homemade barbecue sauce in it but you can use whatever bbq sauce you prefer to make it. I first came up with this recipe about 4 years ago now and it’s been a hit with everybody who has tried it ever since! It is an incredibly easy and simple recipe to make as well as a great appetizer or snack when you are in a hurry.  This recipe makes a lot of dip (6 cups or 1420 ml) so make sure your blender can hold that much or you might have to cut the recipe in half.

We worked a lot until we could figure out a way to make tofu tasty and colorful without frying it, and we are proud to present you with the results. This cashew cream fruit salad recipe was the idea of the nutritionist we are working with, Dimitra Makrigianni, as a fruit salad that will keep someone satisfied for dinner. The combination I chose made me fall in love with it and picture it for breakfast as well! A filling fruit salad featuring corn flakes as a crust, a fluffy sweet cashew cream filling paired with oranges, blonde raisins and cinnamon on top. As some of our readers may remember, we decided to do a 30 day raw vegan challenge beginning at the end of April 2014 through May 2014.  We never managed to post the results and our thoughts on the challenge before our hard drive crashed over the summer. Shame on us for not backing up, so if you are reading this right now you should make a mental note to back up your important files after you are done reading! Lucky for us, Athanasia kept old school notes with a pen and paper so we are still able to (finally) publish this post.
