Lemon Fried Tofu Chicken – Vegan & Gluten Free
I had first attempted making lemon fried tofu chicken back in July (see our Vegan Mozzarella post for it’s first honorable mention). It turned out really well but we ate it so fast there was no time to photograph it for the blog! Needless to say, we both love this recipe so much we felt it was time to share it with our readers, so, we made it again.

Pows! Gluten Free Vegan “Meat” on Bread with Cheddar
Pows! What in the world is a pow? Well, as legend has it, my mom’s sister and her roommate made these when they were in college. They took the only ingredients they had left in the house and pow! Pows were officially born. My mom made these for my siblings and I as we grew up and we loved them! I actually never knew the story behind them until I told my mom a few weeks ago I was making vegan pows. She told me the story so now I know they came from my Aunt.
Making this recipe vegan was pretty easy and definitely delicious! I had to make these because I wanted Athanasia to try one of my favorite childhood foods veganized. As it turns out, she loves them too so I have made these a few times in the past month! This tasty grub can be served as an appetizer, snack, side dish or even a main course (they are filling)!

Roasted Red Peppers With Vegan Feta
Due to popular demand we present to you a simple recipe for a Greek appetizer: roasted red peppers with vegan feta cheese. Jake is in love with the vegan feta, I have heard him say things like “I would buy it dinner and…”, “I could eat this every day” (which has been the case the past few weeks), and “I should marry this feta and have little feta kids running around”. Sounds like he found himself a mate there! It also sounds like he has more Greek in him than it shows. Who knew? Lucky for him, feta goes with everything, and especially with roasted red peppers! (Note from Jake: It’s true, I have said all of these things. I am not saying I am proud of it but I am certainly not ashamed either. This vegan feta is scrumtrulescent!)
Gluten Free Vegan Pecan Pie
I loved pecan pie before I became vegan. Every holiday meal at Grandpa & Grandma’s featured a choice of pecan pie or pumpkin pie for dessert. I will always remember walking into their warm house from the bitter cold November Minnesota weather every Thanksgiving. We were always greeted at the door by the warm smiles of my Grandparents and the unforgettable aroma of my Grandma’s amazing cooking. I am still trying to figure out how any of us ever had any room left in our bellies for dessert! Yet, there always seemed to be just enough room left for a slice of pie. I love pumpkin pie as much as anybody possibly could but I always chose pecan pie because I liked it just a little bit more. I told Athanasia I wanted to veganize my favorite pie of all time so we made this delicious gluten free vegan pecan pie. This is how I celebrate my American roots for Thanksgiving here in Greece!
Last year we went on a bit of a sugar frenzy with our recipes so I wanted to do my best to make this recipe delicious without using as much. What? A low sugar gluten free vegan pecan pie? That’s right! The only actual sugar in this entire recipe is a tablespoon in the crust. Also, since it’s a vegan recipe it obviously has no eggs in it either! Here is how I did it: Continue reading Gluten Free Vegan Pecan Pie
Gluten Free Ketchup
We were recently shocked when reading the ingredients label of the organic ketchup at the supermarket. The list included wheat flour! Of course, it is not uncommon to use flour as a thickener when making condiments, however, this meant it was time for me to make our own gluten free ketchup! I often thought store bought ketchup was a bit too sweet for my liking anyway so this was an opportunity I was looking forward to.
Gluten Free Vegan Mozzarella Sticks
Remember the days of walking into a restaurant, sitting down and ordering mozzarella sticks? Well, keep dreaming. However, we can teach you how to make your own gluten free vegan mozzarella sticks right in your own kitchen! Fair enough, right? These are so delicious and oozing with melted vegan cheese (thanks to the amazing vegan mozzarella cheese blocks made by Violife/Viofree)! As many of our readers have already figured out, we are vegan junk food junkies. We love making pizzas, vegan chicken nuggets and onion rings, so, it was definitely time to add vegan mozzarella sticks to our menu!
Imam Βayildi
The Greeks and Turks share many things, customs, words, and thankfully recipes. One of the most traditional Turkish dishes we also cook often in Greece is Imam Bayildi (which means “the Imam fainted”). He fainted because he heard how much olive oil his wife used in the Imam Bayildi! We wanted to see how tasty this dish would be without any olive oil, so we tried and the results were very satisfying! Light, yet juicy and tasty, we fainted from pleasure! Party in the Graveyard Brownies
Happy Halloween! What better way to celebrate than having some fun in the kitchen? We made these delicious party in the graveyard brownies. However, if you come to our door trick or treating there probably will not be any brownies left. Sorry, but they are that good!
Vegan Sweetened Condensed Milk
We needed to make vegan sweetened condensed milk for a recipe we were making and it turned out so well I decided we should share it! This recipe is really simple as it has only two ingredients: coconut milk and organic raw cane sugar. It is always nice to have sweetened condensed milk for baking, so, why shouldn’t vegans have it available as well? Continue reading Vegan Sweetened Condensed Milk
