The Greeks and Turks share many things, customs, words, and thankfully recipes. One of the most traditional Turkish dishes we also cook often in Greece is Imam Bayildi (which means “the Imam fainted”).  He fainted because he heard how much olive oil his wife used in the Imam Bayildi! In our last post we mentioned how Viotros sent us a mountain of vegan cheese to come up with recipes for. Athanasia had the idea to mix and match different flavors of their vegan cheese for that post, so, now it’s my turn! I have casually mentioned three and five cheese pizzas to her from my non-vegan days only to hear her say “yeah right!”. Well, it was time to show her it’s true! With basketball season right around the corner it’s time for a slam dunk five cheese vegan pizza! We made this pizza using five different flavors of vegan cheese from Viotros and it is delicious!

Growing up in Greece means you enjoy Italian cuisine using Greek tomatoes, garlic and basil. Vegetables grown in Greece truly have amazing flavor! One of my all time favorite dishes is traditional gnocchi alla sorentina. This post is a recipe for the gluten free vegan version! Athanasia came across this delicious vegan Feta cheese recipe on another vegan recipe blog  so we wanted to try it out. We tried the original recipe and proceeded to change it a bit to our liking. This recipe is the end result and we are very happy with it; it is inspired by the Feta used in the Greek tomato salad known as horiatiki. We wanted to try this recipe on a pizza inspired by this very salad. We had just used all our olives the day before we made this pizza but other than that it is kind of a Greek tomato salad pizza! Of course, it was my idea to add some corn on top of the pizza after it had been baked which is not traditionally in the Greek tomato salad but it was very tasty! It has been awhile since we posted because Athanasia has been swamped with her final exams. We are sorry about that. Exams are brutal for physics students! Athanasia had this amazing idea to make zucchini burgers using some veggies and spices. I helped her come up with some of the flavor enhancements but it was her genius idea to include spearmint in them, although I had my doubts at first… she was right all along! These burgers were amazing and according to her good friend Paulina they are also low in calories! Here is how we made them:

It should be no secret to our readers by now how much I love pizza. I had developed this recipe for a gluten free vegan Italian pizza crust right before our raw vegan challenge and it was one of the last things we ate before the challenge. We both loved it and so I wanted to make it again. A good Italian pizza crust has to have the right blend of herbs in it or else it will either lack flavor or be too overpowering.

Raw Vegan Alfredo Pasta

One of our favorite recipes we have made so far is our Vegan Chicken Alfredo Pasta. Since we are still doing our 30 day raw challenge I wanted to make a raw vegan Alfredo pasta. We used raw carrots and raw zucchinis to make the noodles and a delicious Alfredo sauce to drown them in. If you are not following a strict raw diet you can enjoy this dish with a side of marinated tofu (click here for recipe) and some mini-rusks for a more filling meal.
